The Catering Edition: Early Bird Gets the Worm

In order to survive in the competitive foodservice market, Australian venues are looking for new revenue streams beyond day-to-day walk ins. Many are expanding their catering programs and changing up what they offer the office crowd as companies seek out more creative meals to serve at meetings and conferences.

Breakfast at a meeting or conference can often be a difficult thing to get right – companies want
easy to serve (and clean up) items that are cost effective. But increasingly, companies are looking for catered meals that offer more creative, more healthy and more customisable options (without losing the simplicity).

To meet these demands, our team has noticed some emerging trends in catering breakfast menus:

Health:
Healthy and ‘clean living’ are priorities for diners at breakfast. Healthy options such as protein-based dishes are always popular. Pair poached eggs or egg-white omelettes with rustic-style breads (like these). Many companies are replacing the bagel or muffin bar with more wholesome, nutrient dense options like omelette or porridge buffets that support a healthier workforce. Make sure you offer milk alternatives with your coffee too!

Flexibility:
Feedback from many companies we’ve spoken to say that they would order more catering to the office if the menu was more customisable. With gluten free diners, vegetarians and vegans it can often be difficult to find a menu that suits the whole group. Caterers who find a way to build customisation into group catering are experiencing a lot of success. Keep your menu flexible and simplistic so you can accommodate all dietary requests (and have some Abbott’s Bakery Gluten Free bread on hand, always).

Global flavours:
Egg and bacon rolls are good, but every breakfast caterer this side of Darwin is serving them. Think outside the box and don’t be afraid to take on some global influences. Consider Persian baked eggs with Turkish Bread, American style French toast with Super Thick Toast, or Asian influenced pancake stacks.

Breakfast catering is quickly turning into one of the most lucrative segments in catering as
businesses look for new ways to keep their morning meetings and conferences exciting. So if you’re a café or caterer brainstorming new ideas for increased revenue, get in touch to chat about how we can help.
