Serves 3
Ingredients:
- 1 pkt Golden Pancakes
- 3 Ripe Bananas
- 50g white sugar
- 150g Ricotta
- 2 tbsp Honey
Method:
Preheat grill to high. Slice banana and fan out on a tray lined with baking paper.
Lightly sprinkle white sugar over the banana and place under preheated grill for 2 minutes with grill door open, check after 2 minutes and continue to grill, checking every ½ to 1 minute, until the sugar lightly colours and toffees. (Be careful as this will be extremely hot!)Once sugar has caramelised, set aside to cool slightly.
In a mixing bowl place Ricotta and Honey and combine well to a smooth consistency.
Place Golden Pancakes on separate tray and warm for 30 – 45 seconds under the grill, making sure they don’t colour.
Arrange 2 pancakes on a plate, place 1 cooled caramelised banana on pancakes and top with 1/3 of Ricotta mix. Repeat with remaining pancakes and serve. Drizzle with more honey if desired for extra sweetness.
