Turkey and Cranberry Club

Serves 4 

Ingredients:

  • 12 Slices of Tip Top One Bread
  • 12 Pieces of KR Castlemaine Short Cut Bacon
  • ¼ cup Whole Egg Mayonnaise
  • 300g Smoked Turkey Breast
  • 6 large Green Oak Lettuce leaves washed
  • ¼ cup Cranberry Sauce
  • 12 thin strips of Brie cheese
  • 4 Garden Tomatoes sliced

Method: 

Preheat grill to high. Lightly toast 4 slices of Tip Top One bread on each side. Repeat with remaining bread. On a lightly sprayed tray, place bacon on tray and lightly spray and cook under grill for 3-4 minutes each side until slightly crisp, remove and place on paper towel to absorb any excess oils. Lay out 4 of the slices of bread and spread with mayonnaise, top with lettuce, bacon and tomato. Spread cranberry sauce over 4 other slices of bread and place on top of base already made, cranberry sauce up. On top of the cranberry, place brie and smoked turkey breast and top with remaining toasted Tip Top One bread. Cut diagonally into quarters and serve.
