Banana & Caramel French Toast on Super Thick White

Ingredients
2 slices Tip Top Super Thick White
2 eggs
¼ cup of milk
1 cup mascarpone
½ cup thickened Cream
¼ cup Maple syrup
Method
To make the French toast, whisk together the eggs and milk in a large shallow bowl.
Dip each slice of bread into the egg mixture. Soak each side for 1-2 minutes.
Cook each sliced of bread in a buttered pan on medium heat until each side is golden brown.
While cooking the toast, using a stand mixer combine the thickened cream and mascarpone to create a fluffy mascarpone cream.
When each slice is cooked, serve topped with banana caramel, a quenelle of mascarpone cream and some edible flowers (such as nasturtiums or cornflowers). Pour over maple syrup right before serving.
Banana Caramel Sauce
Ingredients
1 cup water
2 1/2 cups sugar
3 tablespoons butter
1/3 cup cream
1 pinch salt
1 to 2 large bananas (sliced)
Method
To make the caramel, add the water and sugar to a frying pan over medium-high heat. Stir constantly with a wooden spoon until the sugar is dissolved.
Once it turns a light brown, take it off the heat and add in the butter and stir to combine.
Then carefully add the cream (it may spit!) and sliced banana and stir until completely combined.
