Canadian style turkey sandwich on Abbott’s Bakery Country Grains

• 2 slices Abbott's Bakery Country Grains, toasted
• 1/3 ripe avocado, smashed
• 80g turkey slices
• 2 slices Swiss cheese
• 1 boiled egg, sliced
• 2 small lettuce leaves
• 3 tomato slices
• 3 red onion slices
• salt and pepper, to taste

For the Chipotle Mayo

• 2 tbsp mayonnaise
• 1 tsp adobo sauce from a can of chipotle peppers in adobo (adjust to taste for desired spiciness)
• ¼ tsp lime juice
• salt and pepper, to taste

1. To prepare the Chipotle Mayo mix together mayonnaise, adobo sauce, lime juice, salt, and pepper in a small bowl. Adjust the adobo sauce according to your preferred level of spiciness.

2. To assemble the sandwich first spread the Chipotle Mayo on both slices of toast. Layer the smashed avocado, turkey slices, Swiss cheese, sliced boiled egg, lettuce leaves, tomato slices, and red onion on one slice.

3. Season with salt and pepper to taste and complete with remaining slice of bread (Chipotle Mayo side down).
