Classic Cheeseburger with Smoky Tomato Jam on Gourmet Bun

Ingredients
1 Tip Top Gourmet Burger Bun, toasted
130 g beef patty (80% lean, 20% fat)
1 slice cheddar cheese
2 slices crispy smoked bacon
2 leaves lettuce
2 slices tomato
1 slice red onion
1 tbsp mayonnaise
Salt and black pepper, to taste
Smoky Tomato Jam:
½ cup cherry tomatoes, halved
1 tsp smoked paprika
1 tbsp brown sugar
1 tsp apple cider vinegar
1 tbsp olive oil
Method
Prepare the Smoky Tomato Jam: Heat the olive oil in a small saucepan over medium heat. Add the cherry tomatoes, smoked paprika, brown sugar, and apple cider vinegar. Simmer for 10–15 minutes, or until thickened. Mash slightly with a fork and let cool.
Cook the Beef Patty: Season the beef patty with salt and pepper. Grill or pan-fry over medium-high heat for 3–4 minutes per side. During the last minute of cooking, top with the cheddar cheese to melt.
Assemble the Burger: Spread the mayonnaise on the bottom half of the bun, then layer the lettuce, tomato slices, and red onion. Place the beef patty with melted cheese on top, followed by the crispy bacon and a dollop of Smoky Tomato Jam. Close with the toasted top of the bun and serve immediately.
