2 slices Tip Top Super Thick White bread, crusts removed
2 rashers streaky maple bacon
1 egg mix (2 egg, ½ tsp milk, pinch of nutmeg. Mix together in a bowl with a fork)
Half banana cut lengthways
½ cup fresh blueberries
1 scoop peanut butter ice cream
1 tbs Golden Gaytime Crumbs
30ml maple syrup
1 disc of cold butter
Small handful of Rose fairy floss (if available)
Preheat oven to 160 deg.
In a non-stick frying pan place the two rashers of bacon and cook until just crispy. Remove and set aside to drain on a paper towel.
Dip crustless bread into egg mix quickly but be sure to cover all the bread. Add to pan and cook on both sides until golden and slightly crispy. When cooked remove and place on a lined pizza tray and keep cooking in a warm oven for 10 minutes. Repeat for second piece of bread.
To serve stack slices, add bacon, fresh banana, blueberries, ice cream and then sprinkle crumbs over the whole dish. Serve with maple on the side. Just before serving place the butter on top of the bacon and the floss on top of the ice cream.
