Fried Tofu Roll on Speedibake Vietnamese Roll

Ingredients
- 1 Speedibake Vietnamese Roll
- 2 tbsp cornflour
- ½ cup panko crumbs
- ½ cup plain flour
- 2 slices hard tofu (appx 50 gm each)
- 1 tbsp Kewpie mayo
- ½ tsp teriyaki sauce
- 4 coriander leaves, sliced
- 4 mint leaves, sliced
- ¼ cup pickled carrot, drained
- 2 gem lettuce leaves, washed and sliced
Method
Preheat fryer to 170 deg. Heat salamander to medium and warm the Vietnamese Roll.
In a bowl mix cornflour with a splash of water to make a paste.
In two separate bowls place the crumbs and the plain flour.
Coat the tofu in flour, dip into the cornflour mix and then the breadcrumbs.
Fry tofu until golden and crispy on both sides (4-5 mins), set aside on paper towels to drain.
In another bowl mix together mayo and teriyaki sauce. Spread mixture generously inside the roll.
Combine herbs, pickled carrot, lettuce, and red chilli.
To build: On top of the mayo mixture add the fried tofu, then add coriander, mint, carrot, lettuce and chilli. Best served immediately.
