2 rashers streaky bacon, cooked until crisp and chopped
2 Tbsp Caesar dressing
1 egg
¼ cup white vinegar
Salt and cracked black pepper
Shaved parmesan, for generous garnish
Method
Bake the garlic bread sub according to pack instructions until golden, crisp and hot.
In a bowl, combine chicken, cos lettuce and bacon. Add Caesar dressing and toss lightly to coat.
Poach the egg in gently simmering water (add vinegar to the water) until the white is just set and the yolk remains soft.
Place one hot garlic bread half on a plate. Spoon the Caesar salad generously over the top, add the poached egg, finish with plenty of shaved parmesan and cracked black pepper, and serve immediately.
