In a small bowl add the oil, shrimp, lime juice, ginger and sweet chilli and shallots, leave to marinate for 20 minutes.
Preheat the oven to 180 degrees then add garlic bread and bake until toasted and warm through.
Heat a non-stick frying pan to high heat, add the marinated shrimp and cook for 4-6 minutes.
Place garlic sub on a serving plate then top with cos lettuce and tomato, add the prawns, scatter the onion, pickles and mint, then drizzle the kecap manis and crispy fried onions.
