Greek-Style Smoked Salmon Pancakes with Caviar and Avocado

Ingredients
2 Golden Pancakes
50 g smoked salmon, sliced
1 tbsp caviar
1 tbsp tzatziki sauce (yogurt, cucumber, and garlic dip)
ΒΌ avocado, diced
1 tbsp diced cucumber
1 tbsp crumbled feta cheese
Fresh dill and mint leaves, for garnish
A sprinkle of lemon zest
1 tbsp slivered almonds, toasted
Lemon wedge, for serving
Method
Warm the Pancakes: Heat the Golden Pancakes and place them on a serving plate.
Assemble the Dish: Layer smoked salmon on each pancake and add a dollop of tzatziki sauce. Garnish with diced avocado, cucumber, crumbled feta, dill, mint, lemon zest, and toasted almonds.
Serve: Serve with a lemon wedge on the side for squeezing over the top.
