Hoisin Duck & Apple Slaw Open Sandwich

Ingredients
2 slices Speedibake Sliced Sourdough Café Loaf
1 tomato, cut in half
90g duck, cooked, shredded
1 tsp hoisin sauce
½ cup kewpie mayo
½ tsp miso paste
½ cup pre-made slaw
¼ green apple, julienne
¼ tsp pickled ginger, julienne
1 tbsp fried garlic
1 tsp red chilli, sliced
1 tsp micro herbs
Method
Heat grill to medium high heat. Vigorously rub the tomato into the sourdough, repeat for the other side, dispose of remaining tomato.
Grill sourdough until toasted. Place side by side on the serving plate.
In a small bowl, dress the duck with the hoisin. Divide duck evenly on top of the sourdough slices.
Top with slaw, followed by green apple and ginger.
Generously sprinkle the fried garlic and chilli.
Serve open with the micro herbs scattered over the top.
