Maple roast pumpkin & whipped fetta country grain sandwich

Ingredients
2 slices Abbott’s Country Grain Bread, toasted
½ cup roasted pumpkin pieces
1 tsp maple syrup
Olive oil, salt and pepper
¼ cup feta cheese
1½ Tbsp Greek yoghurt
1 Tbsp toasted mixed seeds
1 Tbsp pesto mayonnaise
Method
Toss pumpkin with olive oil, maple syrup, salt and pepper and roast until tender and caramelised.
Whip feta and yoghurt together until smooth.
Spread whipped feta on one slice of toast. Top with roast pumpkin, toasted seeds and pesto mayo.
Close with a second slice, cut if desired and serve.
