Place garlic slices on a flat grill butter side down and grill for 4 mins until butter is golden.
In a small bowl mix olives, tomato, dill, parsley, capers and capsicum with a drizzle of olive oil. Season with cracked pepper and juice of half a lemon.
To build bruschetta: on top of buttered and toasted side of garlic slices, add tomato evenly across the three slices, then place anchovies across the top.
