1 tsp Methe (available from Indian Grocer but not essential)
1 cup mozzarella, shredded
¼ cup Parmesan, shredded
1/3 cup soft goats cheese
½ cup piperade (or other red capsicum relish)
1 tbsp dukkah
Method
Thaw garlic bread so that cut sections can be slightly pulled apart.
In a bowl mix coarsely chopped spinach and methe with shredded mozzarella and shaved parmesan. Spoon a little section of this mix in between each cut section of sub. Sprinkle crumbled goats cheese across the top then wrap sub in foil (leaving top open and not touching the cheese).
Bake in a hot oven until cheese has melted then remove from oven, unwrap from foil and place in a serving basket. Add piperade spread evenly along the Sub then sprinkle with dukkah and serve.
