Super Thick Raisin with saffron poached pear and lemon curd

Ingredients
2 slices Tip Top Super Thick Raisin, toasted
1 ripe pear, peeled, halved, and cored
4 cups water
1 cup sugar
pinch of saffron threads
ΒΌ cup lemon curd
1 tbsp chopped pistachios
1 meringue nest, crumbled
6-8 raspberries
edible flowers, for garnish (optional)
Icing sugar, for dusting (optional)
Method
In a saucepan, combine water, sugar, and a pinch of saffron threads. Bring to a gentle simmer over medium heat, stirring until the sugar is dissolved. Carefully place the pear into the saffron-infused poaching liquid. Reduce the heat to low and let the pear poach for about 20 minutes, or until tender when pierced with a fork. Remove the pear from the poaching liquid and let cool. Once cooled, slice thinly.
Spread a generous layer of lemon curd evenly over each slice of Tip Top Super Thick Raisin.
Arrange the pear on top of the lemon curd layer, sprinkle with chopped pistachios and raspberries, then garnish with crumbled meringue, edible flowers and icing sugar.
