Tip Top Super Thick Raisin Toast with Citrus-spiked Cottage Cheese, Tropical Fruits and Granola

Ingredients
2 slices Tip Top Super Thick Raisin Toast
1 cup cottage cheese
Zest of 1 orange, lemon and lime
2 tbsp icing sugar
1 cup of chopped fruit (we used pineapple, nectarine, paw paw, dragon fruit and mango)
Edible flowers and dried dragon fruit, to decorate
Method
Lightly toast Tip Top Super Thick Raisin Toast. Spread with cottage cheese. Top with fruit, a sprinkle of granola and chia seeds. Decorate with edible flowers and dried fruit.
GRANOLA
Ingredients
2 slices Tip Top Super Thick Raisin Toast
Citrus-spiked Cottage cheese
Granola
1 cup of chopped fruit (we used pineapple, nectarine, paw paw, dragon fruit and mango)
Edible flowers and dried dragon fruit, to decorate
Method
Preheat oven to 160°C.
Combine oats, seeds, coconut, mixed spice and maple, stir well.
Spread onto a tray and bake for 25-30 mins, stirring half way. Allow to cool completely.
CITRUS-SPIKED COTTAGE CHEESE
Ingredients
1 cup cottage cheese
Zest of 1 orange, lemon and lime
2 tbsp icing sugar
Method
Finely grate zest into cottage cheese, add icing sugar, stir to combine.
Spoon into a muslin cloth and hang in a jar, refrigerated, overnight to strain.
