Balancing Health Trends with Indulgence
The modern consumer is sometimes contradictory. On one hand, there’s a strong focus on health, wellbeing, and longevity. On the other, there’s an undeniable craving for comfort, emotional relief, and daily indulgence.
This wellness ‘paradox’ isn’t new, but it’s intensifying. Successful foodservice operators are no longer choosing between health and indulgence, they’re offering both, and they’re designing menus that allow customers to feel good about their choices.
Understanding Today’s Diner
Recent Mintel Consulting research shows that 86% of Australians think eating healthily is a form of self-care, and 83% agree that making healthy food choices now supports future health. Yet in the same breath, 83% say that feeling stressed prompts them to reach for comfort food, and 55% say they prioritise indulging in everyday pleasure.
These aren’t contradictory consumers, they’re the same consumers, navigating the same tension that operators must learn to serve.
Permissible Indulgence
The concept of “permissible indulgence” has emerged as the practical resolution to this trend. Rather than forcing a binary choice between a salad and a burger, the most successful operators are creating menu items that feel indulgent while incorporating elements that support a sense of health-consciousness.
This might mean a rich, satisfying burger built on a high-fibre bun, or a decadent café sandwich made with wholegrain or sourdough bread that carries genuine nutritional credentials. The indulgence is real, but the guilt is minimised.
The Menu Design Sweet Spot
Your menu shouldn’t be segmented into a “healthy section” and an “indulgent section.” Instead, every item should be designed with both dimensions in mind.
A premium burger can be both craveable and considered. A café sandwich can be both satisfying and nutritious. Operators who understand this dynamic, and build their offerings accordingly, will be best positioned to capture the loyalty of a consumer who wants to eat well and feel good.
