Battered Fish Burger with Asian Slaw and Sesame Mayo on Gourmet Bun

Ingredients
Burger:
1 Tip Top Gourmet Burger Bun, toasted
120 g white fish fillet (e.g., barramundi or cod)
Vegetable oil, for frying
Batter:
½ cup all-purpose flour
¼ cup cornstarch
1 tsp baking powder
½ cup cold sparkling water
Asian Slaw:
¼ cup shredded red cabbage
¼ cup shredded carrot
1 tbsp rice vinegar
1 tsp sesame oil
½ tsp sugar
Sesame Mayo:
1 tbsp mayonnaise
1 tsp sesame oil
½ tsp soy sauce
Method
Prepare the Asian Slaw: In a bowl, combine the red cabbage, carrot, rice vinegar, sesame oil, and sugar. Toss well and set aside to marinate.
Make the Sesame Mayo: In a small bowl, mix the mayonnaise, sesame oil, and soy sauce. Set aside.
Batter and Fry the Fish: In a mixing bowl, whisk together the flour, cornstarch, and baking powder, then gradually add the cold sparkling water to form a smooth batter. Heat the vegetable oil in a pan to 180°C (350°F). Dip the fish fillet into the batter and carefully place it in the hot oil, frying for 3–5 minutes or until golden and crispy. Drain on paper towels before assembling the burger.
Assemble the Burger: Spread the sesame mayo on the bottom bun, then place the crispy fish fillet on top. Add a generous layer of the Asian slaw, close with the toasted top bun, and serve immediately.
