In a small bowl mix all the batter ingredients until well combined. Dip the mackerel in the batter until coated on both sides. Add to the fryer and cook for 8-10 minutes until golden and crispy. Remove from the heat and drain on a paper towel.
In another bowl add the rocket, tomato, onion and mint, then dress the leaves as desired.
To assemble the burger first spread the tartare, add a dash of hot sauce, then place the
fish on the burger, top with salad, followed by the burger lid. Serve immediately for best results.
