Preheat the oven to medium high heat. Preheat a pan to medium high heat.In the pan quickly sauté the leeks with butter, dijon and nutmeg until softened.
Lightly toast both slices of sourdough then top one slice with the leeks. Add two slices of ham and the turkey, then top with the provolone. Add the other slice of sourdough to the top.
Place the sandwich on a lined oven tray. Top with bechamel and mozzarella, then place in the oven
to grill until the cheese has melted.
Before serving, top the sandwich with the fried egg, sprinkle the shallots, dust the paprika over the egg, then add the rocket and red onion. Serve while warm for the tastiest results.
