English Muffin with Smoked Ham, Fried Egg, Shakshuka Sauce, Feta, and Dukkah

Ingredients
2 Tip Top English Muffins, split and toasted
Shakshuka Sauce:
1 tbsp olive oil
¼ medium brown onion, finely diced
¼ red capsicum, finely diced
1 garlic clove, minced
200 g tomato passata
½ tsp ground cumin
½ tsp smoked paprika
¼ tsp chilli flakes (optional)
Salt and pepper, to taste
For the Muffins:
2 slices smoked ham
2 eggs
40 g crumbled feta cheese
1 tbsp dukkah (optional)
Fresh parsley or coriander, chopped (for garnish)
Olive oil, for frying
Method
Prepare Shakshuka Sauce: Heat olive oil in a small frying pan over medium heat. Add onion and capsicum, sauté for 4–5 minutes. Add garlic, cook 1 minute until fragrant. Stir in passata, cumin, paprika, and chilli flakes. Season with salt and pepper. Simmer on low for 8–10 minutes, stirring occasionally, until slightly thickened.
Fry ham slices in a separate pan over medium heat for 1 minute per side. Set aside.
In the same pan, fry eggs to your preference.
Butter each muffin half. Spread shakshuka sauce on the base halves. Top with ham, fried egg, feta, and dukkah. Garnish with parsley or coriander.
