1 Speedibake Turkish Round Lunch Roll, sliced and lightly toasted
80g sliced roast turkey breast
¼ cup kimchi, roughly chopped
1 slice Swiss or provolone cheese
2 slices cucumber
2–3 slices tomato
¼ avocado, sliced
1 tbsp gochujang mayo (mix 1 tbsp mayo + ½ tsp gochujang)
Salt and black pepper, to taste
Fresh coriander or micro herbs, for garnish (optional)
Quick pickled red onion:
2 slices red onion
1 tsp rice vinegar
Pinch of sugar and salt
Method
Pickle onion: Mix red onion slices with vinegar, sugar, and salt in a small bowl. Set aside while assembling.
Assemble sandwich: Spread gochujang mayo on base of toasted roll. Layer with roast turkey, chopped kimchi, cheese, cucumber, tomato, and avocado. Season with salt and pepper.
Finish: Add a few slices of pickled onion and scatter with fresh coriander or micro herbs if using. Close and serve immediately.
