1 Soft Turkish Oval Lunch Roll, brushed lightly with olive oil on inside
4 x 50g Lamb Koftas
½ cup beetroot hummus
1/2 cup mizuna leaves
2 slices haloumi
½ cup tabbouleh
½ cup tzatziki
1 tsp pomegranate seeds
Pinch of smoked paprika
4 mint leaves, sliced
Method
Grill Turkish bread, oiled side down, in a non-stick fry pan.
In the same pan, grill haloumi until golden and soft.
Warm koftas either in a hot oven or quickly in a microwave.
To assemble: Spread beet hummus on base of the Turkish roll, distribute mizuna evenly, add haloumi, then tabbouleh and koftas. Dress with tzatziki. Garnish with pomegranate seeds, pinch of smoked paprika and fresh mint. Add lid on top and serve while still warm for best results.
