Pork Okonomiyaki French Toast on Speediake Rustic Sourdough Vienna

Ingredients
1-2 eggs, beaten
½ cup milk
Salt and black pepper to taste
2 strips pork belly
1egg, for frying
½ cup cabbage, shredded (mix or red and white cabbage)
Okonomiyaki sauce (Japanese savory sauce)
Kewpie mayonnaise (Japanese mayonnaise)
½ tsp sesame seeds
1-2 tsp sushi ginger, sliced
2 tsp shallots, slices
Method
Preheat a non-stick pan to medium high heat.
Beat the eggs, milk, salt, and black pepper in a shallow dish.
Dip each slice of Rustic Sourdough Vienna into the egg mixture, ensuring both sides are coated.
Cook the slices in a pan over medium heat until they are golden and cooked through.
Clean the pan and then return it to medium heat. Fry the pork belly until it is caramelised on both sides. Add the egg to one side of the pan and cook until fried to customer’s liking.
Top one slice of the French toast with the pork, then the egg, followed by the sliced cabbage.
Drizzle with okonomiyaki sauce and kewpie mayonnaise then scatter the sesame seeds, ginger slices and shallots. Serve immediately for tastiest results!
*Garnish with bonito flakes and dried seaweed flakes for an authentic Japanese touch
