Sweet and Savoury Café Raisin French Toast

Ingredients
1 slice Tip Top Super Thick Raisin
1 cup egg wash (2 eggs, plus 2 tbsp
milk, whisked)
2 slices prosciutto
1 tbsp blue cheese
1 fresh fig, cut into quarters
1 tbsp honey
1 tbsp walnut praline, crushed into
chunks
To serve micro witlof, radicchio,
celery leaf
Method
Pre heat non-stick pan to medium heat.
Add egg wash to a wide flat bowl and dip in the bread ensuring it is evenly soaked on both sides.
Fry the bread on in the pan until browned and cooked on both sides.
To serve, top the French toasted Tip Top Super Thick Raisin with prosciutto, small chunks of blue
cheese and the fig. Drizzle the honey over the top and scatter pralines then garnish with micro herbs.
