Video Recipe: Southern Fried Chicken Burger on Tip Top Milk Bun

Ingredients
1 Tip Top Milk Bun
2 butter lettuce leaves
2 tbsp aioli
Fried Chicken (ingredients detailed below)
Modern Slaw (ingredients detailed below)
Method
Prepare the chicken and slaw (as per instructions below)
Lightly toast the Tip Top Milk Bun (in a pan or on the grill) and spread aioli on the base.
Top with butter lettuce leaves
Top with chicken
Top with a handful of slaw
Fried Chicken
Ingredients
½ cup milk
1 large egg
½ cup all-purpose flour
1 tsp salt, plus additional for sprinkling
1-2 skin-on, boneless chicken pieces
Vegetable oil, for frying
Method
To make the fried chicken, in a bowl, combine the milk and eggs. Whisk to blend well.
In another bowl combine the flour and salt and stir to combine.
Dip the chicken pieces in the milk and egg mixture, let excess drip off before adding to the bowl of seasoned flour. Toss to coat the chicken thoroughly in flour.
Heat your oil in a deep heavy skillet or deep fryer to 180 degrees. Fry the chicken until golden brown and cooked through. Remove onto a paper towel lined plate and sprinkle with extra salt immediately.
Modern Slaw
Ingredients
¼ cup red cabbage, shredded
¼ cup white cabbage, shredded
¼ cup carrot, grated
¼ cup kale, finely chopped
1 tbsp jalapenos, finely diced
¼ red onion, finely diced
1 lime
Method
To make the slaw, combine the cabbages, kale, carrot, jalapenos and red onion in a large bowl, squeeze over the lime and toss well to combine and ensure everything is coated.
