Banh Mi Style Pulled Pork Sandwich

Ingredients
2 slices Abbott’s Village Bakery Country Grains
¾ tbsp chicken liver pate
90g pulled pork
1 stem coriander
1 tbsp pickled carrot, drained
1 tbsp pickled daikon discs, well drained
1 tbsp ‘Laughing Cow’ cheese
4 slices fresh cucumber
3 slices fresh radish
Dash soy sauce
1 tsp red chilli, sliced
Method
On one slice of bread spread pâté generously.
Add roast pork and a dash of soy sauce over the top.
Add chilli, pickled carrot, discs of daikon, coriander and then fresh radish.
On the other slice spread Laughing Cow cheese, season with salt and pepper and add to the sandwich before serving.
Can be enjoyed fresh or toasted if you like that crunch!
