Gluten Free Chimichurri Chicken, Manchego and Avo Sandwich

Ingredients
2 slices Abbott’s Village Bakery
Gluten Free Soy & Linseed
100g chicken thigh, poached and shredded
1 tbsp chimichurri dressing
½ avocado, smashed
3 slices tomato
1 cup slaw
1 slice manchego cheese
Method
In a small bowl add chicken and chimichurri and mix until chicken is evenly coated.
To assemble, on one slice of bread spread smashed avocado, top with tomato, slaw, chicken, the cheese and then add the other slice to complete the sandwich.
