In a medium-hot non-stick pan fry off bacon until crispy and golden. Set aside until assembly. Give roasted carrots a quick toss in the pan fats to coat them in the bacon fat.
To assemble: On one slice of bread spread sweet mustard pickle, add turkey, roast baby carrots, bacon, camembert and rocket. Spread truffle mayo on the other slice of bread and add to sandwich. Serve as either a fresh or lightly toasted sandwich.
