Millennial ‘Shrimp Cocktail’ Sandwich

Ingredients
2 slices Abbott’s Village Bakery
Light Rye
1/2 cup cooked shrimp
½ avocado
3 slices fresh tomato
3-4 rings red onion
1 tbsp chipotle mayo
1 butter lettuce leaf, washed and
patted dry
Lemon juice
Salt and pepper
1 prawn cracker, to garnish
Method
In a bowl smash avocado into chunks, season with a squeeze of lemon and some salt and cracked pepper. Spread avocado onto one slice of bread.
In the same bowl, mix mayo and shrimp and add to the sandwich.
Add tomato, sliced onion and lettuce then add the other slice of bread to finish.
Cut in half and serve immediately. Best with a side of prawn crackers.
