Shrimp Roll on Speedibake Vietnamese Roll

Ingredients
1 Speedibake Vietnamese Roll
100 g shrimp, peeled and deveined
1 tbsp olive oil
4β5 fresh coriander leaves
4β5 fresh mint leaves
ΒΌ cup pickled carrot and daikon
1 long slice cucumber, thinly sliced
1 tbsp Kewpie mayonnaise
A splash of hot sauce (optional, adjust to taste)
Method
Heat olive oil in a pan over medium heat.
Season the shrimp with salt and pepper, then cook for 2β3 minutes per side, or until pink and opaque. Remove and set aside.
Slice the Vietnamese Roll and spread Kewpie mayonnaise on the bottom half.
Add the cooked shrimp, followed by coriander and mint leaves. Layer on the pickled carrot and daikon, then the cucumber slices.
Drizzle with hot sauce, adjusting to your spice preference, and serve immediately.
