As the weather cools, it’s important to look for recipes that are a little warming but still light enough for the temperate days. Diners are still catching the last rays of sun during lazy weekend brunches and it’s a great opportunity to cook satisfying autumn recipes that will move your menu gracefully from summer to winter. Herby Mushroom and Goats Cheese with Egg on Abbott's Farmhouse Wholemeal
Three types of mushroom, creamy goat’s cheese and heaps of herbs give this breakfast a satisfying and savoury intensity. It’s an excellent meat free offering for your brunch menu and can pass as a ‘big breakfast’ when you add roast tomatoes and poached eggs (but is just as delicious without).

Breakfast Bruschetta on Sourdough Vienna
We’ve taken classic bruschetta and given it an Aussie brunch twist adding smoked sesame cheese for a nutty, creaminess and pesto to keep it fresh and light. This is great with a poached egg on top (worth offering it as an option) or just as is for a light, delicious meal to go with a latte.

Big Breakfast Pancakes
Pancakes make an excellent base for a big breakfast, but few are brave enough to try. Instead of pairing your regular big breakfast offering with traditional white or sourdough, offer Golden Pancakes as an option. You’ll be surprised how many diners take you up on it as a light and sweet alternative.

Vegan Breakfast crumpets
Did you know Golden Crumpets are actually vegan? This makes them the perfect base for vegan brunch offerings. We like to make our own vegan macadamia butter and pair it with sweet and juicy berries.
